Roasted coffee is only as good as quality and type of green coffee they come from!  If you are a coffee "fundi" (expert), you already know that coffee grows on trees  that flower like cherry blossoms, and produce a red fruit that we call a coffee cherry!  You can even pick them and eat the cherries, although they only have a little meat before getting to the parchment inside that contains the coffee beans themselves.

  Our coffee cherries are grown at about 4500 feet elevation, on the plateau of Zambia's northern province.  They are carefully nurtured, cultivated and hand picked.  Coffee is a labor intensive product, taking many hands to move the cherries into the marketplace.  Coffee cherries are hand picked when  cherry red, and washed before the sweet cherry is mulched.  Mulching removes the sweet cherry covering, the parchment is then washed, graded by density or weight, and sent to be sun-dried.  When it has reached the desired moisture content, the parchment is removed, the beans graded by size, and polished for bagging.  We receive our coffee in different screen sizes.  Each screen size has its own unique flavor characteristics, and careful roasting brings these out.

Kansato Estate is also working hard to preserve the environment through responsible farming practices, and the inter-planting of shade trees, making healthier trees naturally!  The use of nitrogen fixing shade trees helps reduce the need for commercial fertilizers.
